Japanese-Style Frites

Sauce au Poivre (Japanese Style)

Instructions

Prepare the Steak

  1. Marinate steaks (2) in soy sauce (2 Tbsp), mirin (1 Tbsp), and grated ginger (1 tsp) for 30 minutes

  2. Remove from marinade and pat dry

  3. Season generously with salt (to taste) and cracked black pepper (to taste)

  4. Let come to room temperature

Make the Frites

  1. Cut potatoes (2 lb) into thick batons (1/2 inch)

  2. Soak in cold water for 30 minutes, then pat dry

  3. Fry at 325 °F for 4-5 minutes (first fry)

  4. Drain and increase oil temperature to 375 °F

  5. Fry again for 2-3 minutes until golden and crispy

  6. Season immediately with furikake (1 Tbsp) and sea salt

Cook the Steaks

  1. Heat cast iron pan over high heat

  2. Sear steaks (2) 3-4 minutes per side for medium-rare

  3. Remove steaks (2) and let rest

Make Sauce au Poivre

  1. In the same pan, add butter (2 Tbsp) and shallots (1)

  2. Sauté until fragrant, about 1 minute

  3. Deglaze with cognac or sake (2 Tbsp)

  4. Add cream (½ cup), cracked peppercorns (2 Tbsp), and soy sauce (1 Tbsp)

  5. Whisk in miso paste (1 tsp) if using

  6. Simmer until slightly thickened

  7. Strain if desired for smoother texture

Assembly

  1. Slice steaks (2) against the grain

  2. Arrange on plates with crispy frites (2 lb) alongside

  3. Spoon sauce au poivre over and around steak

  4. Serve immediately while everything is hot
