Imagine a boozy, matcha milkshake that kinda tastes like those Korean Melon Bar desserts. This is the “alleged” recipe from Hop Sing Laundromat, a speakeasy based in Philadelphia. If you have ceremonial grade matcha, that will be perfect for this drink. Amp up the matcha as much as possible to get those earthy notes.

Matcha concentrate
Add matcha (1 ½–2 tsp) to a small bowl. Add 175 °F water (just below boiling) and whisk vigorously until smooth. Use as little water as possible to make 0.5 ounce of concentrated matcha.
Cocktail
Add the Licor 43 (1 oz), matcha concentrate (½ oz), heavy cream (¾ oz), vodka (½ oz), and egg white (1) to a cocktail shaker.
First, dry shake (shake without ice) for about 15-20 seconds to emulsify the egg white. Then add ice and wet shake (shake with ice) vigorously for another 15-20 seconds to chill the drink.
Express an orange peel before pouring - hold the peel over the glass, colored side down, and give it a good twist to spray the oils. Then strain the cocktail into your glass.
