The Saigon Flip

This is the “alleged” recipe from Hop Sing Laundromat, a speakeasy based in Philadelphia. It’s a rum based cocktail, and it’s a flip, a class of cocktails that’s similar to eggnog. This drink is reminiscent of an orange creamsicle, except it’s sparkling and boozy, creamy, orange, and super chuggable.

Instructions
Add the Licor 43 (½ oz), rum (1 ½ oz), lime juice (¼ oz), condensed milk (1 oz), and egg yolk (1) to a cocktail shaker.
First, dry shake (shake without ice) for about 15-20 seconds to emulsify the egg yolk.
If making a large batch, blend the batch mixture with an immersion blender to emulsify everything together
Then add ice and wet shake (shake with ice) vigorously for another 15-20 seconds to chill the drink.
Express an orange peel over the drink—hold the peel over the glass, colored side down, and give it a good twist to spray the oils over the surface. Strain the cocktail over a large ice cube in a rocks glass. Top with a splash of club soda.
