Instructions

Prepare the Shrimp

  1. Clean shrimp (1 lb) thoroughly, removing shells but leaving tails on

  2. Devein and rinse in ice water until completely clean

  3. Pat completely dry with paper towels

Make Marinade

  1. Combine soy sauce (½ cup), mirin (¼ cup), rice vinegar (2 Tbsp), and sugar (1 Tbsp) in bowl

  2. Whisk until sugar (1 Tbsp) dissolves

  3. Add garlic (2 cloves), ginger (1 in), dried chilies (2), and green onion (1)

  4. Let marinade sit 10 minutes to infuse flavors

Marinate Shrimp

  1. Place cleaned shrimp (1 lb) in shallow dish

  2. Pour marinade over shrimp (1 lb), ensuring they're fully submerged

  3. Cover and refrigerate for 2-4 hours (no longer to prevent over-curing)

  4. Turn shrimp (1 lb) once halfway through marinating

Assembly

  1. Remove shrimp (1 lb) from marinade and arrange on chilled plates

  2. Strain marinade and drizzle lightly around plate

  3. Garnish with thin radish slices and microgreens

  4. Sprinkle with sesame seeds

  5. Add Korean chili threads for color if desired
